Recipe | St Patrick's Day Cupcakes


As St Patrick's day is this Friday (which I'm very excited about by the way), I thought I'd celebrate the best way I know how: baking! This recipe is so easy to make but turns out looking very cute and just as tasty. Keep reading if you'd like to know how to make 12 of these lovely  Irish themed cupcakes.

Ingredients
For the Cupcakes:
  • 120g Plain Flour
  • 140g Caster Sugar
  • 1½ tsp Baking Powder
  • A pinch of Salt
  • 40g Unsalted Butter
  • 120ml Whole Milk
  • 1 Egg
  • ¼tsp Vanilla Extract
For the icing:
  • 250g Icing Sugar
  • 80g Unsalted Butter
  • 25ml Whole Milk
  • A couple drops of Vanilla Extract
  • Lucky Charms Marshmallows
  • Sprinkles

Recipe

For the Cupcakes:
  1. Start by preheating your oven to 170°c and line your baking tray with cupcake cases
  2. Mix together your butter and sugar using an electric mixer, handheld whisk or by hand using a spoon
  3. Then add in your flour, baking powder and salt until everything is combined to a sandy consistency
  4. Gradually pour half your mix into the mixture and mix until incorporated
  5. In a separate bowl, mix together your remaining milk, egg and vanilla extract
  6. Pour your wet ingredients into your original mixture and mix for a few minutes until smooth
  7. Spoon your mixture into your paper cases until each is two-thirds full
  8. Bake your cupcakes in the oven for 20-25 minutes or until golden brown and they spring back when touched
  9. Leave to cool slightly in the tray, then leave on a wire rack to cool completely
For the Icing:
  1. Beat together your icing sugar and butter until they are well mixed
  2. In a separate bowl combine your milk and vanilla extract, then add to your mixture a few spoonfuls at a time
  3. Once all the milk and vanilla extract has been added, continue to beat for roughly five minutes so it becomes light and fluffy
  4. Pipe your icing onto the cupcakes and decorate with sprinkles and your lucky charms
