Sugar Free Pancakes

I have recently started a sugar detox which means that I don't eat any processed sugars and I can only eat foods that don't contain sugar! So far, it has been easier than I originally thought it would be and I am already feeling the benefits! 

It was Pancake Day yesterday, I didn't want to let my not eating sugar stop me from enjoying one of my favourite days of the year! Therefore, I researched and found a recipe by Davina McCall which allows me to enjoy the day without the guilt of the sugar! Find out how I made them below:

  • Juice of 1/2 a lemon
  • 225 unsweetened almond milk
  • 1 egg
  • 1/2 vanilla pod
  • 175 spelt flour
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1 tbsp coconut oil
  • 1 tsp cinnamon 
Firstly add the lemon juice and milk to a jug and stir well; leave for about 5 minutes so that the mixture becomes homemade buttermilk! This will make it sour and will make the pancakes fluffier.

Then beat the egg and add into your buttermilk mixture. Once combined add in the vanilla seeds from scraping the inside of the vanilla pod and mix.

Next put your flour, bicarbonate of soda, cinnamon and baking powder in a bowl and whisk together; add the buttermilk and egg mixture gradually while stirring to make as lump free as possible. Stir well until all combined and there are no lumps.

Melt your coconut oil in a pan and add to your pancake mixture and stir again. Then you are ready to begin cooking your Sugar Free Pancakes!

Put your pan on a medium/high head and add in a few spoonfuls of batter (2 tbsp works best but feel free to add as little or as much as you want, depending on how big you like your pancakes). Cook the pancake on one side until the pancakes edges have formed and then flip it over and continue to cook it until it has browned. Repeat until you have run out of mixture.

Lastly, top them how you would like. I went savoury at first, and added bacon and mushrooms; I also tried out a sweet combination by adding frozen banana and homemade Sugar Free apple and strawberry crumble! When making them I made a double batch, and on the second I replaced the cinnamon with a 1/4 cup of raw cacao powder which gave it a completely different taste!
