Shortbread Christmas Cookies


Today I felt super festive; so I decided to do some Christmas baking! I love the month of December, and in particular baking Christmas themed treats while listing to festive songs; I decided to do some Christmas baking today! It's a  genuinely easy recipe as these are simply shortbread cookies that are festive shaped and decorated with writing icing. And they only use three ingredients! Keep reading if you would like to know how I created these cookies.

Ingredients
For the cookies you will need:
  • 125g butter
  • 55g caster sugar
  • 180g plain flour
To decorate:
  • Colourful writing icing (especially in festive colours, e.g. red, green and white)
  • Any decorations you may want

Recipe
Firstly you will need to preheat your oven to 190˚c/375˚/Gas Mark 5

Then add your 125g butter and 55g caster sugar into a bowl and mix together until smooth. I used a handheld electric whisk, but you need to be careful not to over mix your butter and sugar. Then add in your 180g plain flour and mix together until the mixture is formed together into a dough like ball.

Next, lift your dough mixture and roll out on your work surface until it is about a cm thick. It would be a good idea to put a sprinkle of flour over your work surface before rolling, so that the dough doesn't get stuck. Cut out the shapes you desire using shaped cutters, the more festive you can find the better. Keep repeating this step until you have used up all your dough; then transfer them onto the baking tray and chill in the fridge for roughly 20 minutes.


Lift out your cookies from the fridge and bake in your preheated oven for 15-20 minutes, or until pale golden brown. Leave them to cool on a wire rack until they are completely cool (otherwise the writing icing will not stick to the cookies).





Then you can decorate your cookies exactly how you would like!
