Bonfire Cupcakes

 As I didn't manage to watch any firework displays or go to a bonfire this year, I was upset that I'd missed out on the whole Bonfire night experience! There was even fireworks going off as we baked these cupcakes! Therefore, my friend Tabitha and I decided to do a bit of baking to cure this feeling. What could be better than a cute mini Bonfire on a cupcake?

The recipe is made up of a simple chocolate cupcakes taken from the Hummingbird Bakery Cookbook, covered with orange icing, decorated with a few Matchmakers. If you want to have a go at creating your own Bonfire cupcakes, then keep reading!

For the Cupcakes:
  • 100g self-raising flour
  • 20g cocoa powder
  • 140g caster sugar
  • 1½tsp baking powder 
  • A pinch of salt
  • 40g unsalted butter
  • 120g whole milk
  • 1 egg
  • ¼tsp vanilla extract
For the Decoration:
  •  340g icing sugar (sifted)
  • 100g unsalted butter
  • 40g whole milk
  • Orange food colouring
  • Matchmakers of your choice

Firstly you will need to preheat your oven to 170ºc/325ºF/Gas Mark 3.

For your cupcakes, put your butter and sugar into a bowl and whisk together, using a freestanding electric mixer or a handheld electric whisk will be easier, but you can just use a spoon instead. We didn't have a mixer and they turned out fine! Then add in your flour, cocoa powder, salt and baking powder into the bowl and continue mixing until everything is combined to a sandy consistency.

In a jug, comine your milk, egg and vanilla extract and whisk together. Once done, slowly add into your bowl, small amounts at a time and beat to get rid of any lumps you may have. Continue whisking until your mixture is smooth, should only need a couple of minutes; do not over mix.

Spoon your mixture into your cases until each is ⅔ full and bake in the preheated oven for about 20-25 minutes, or until your cupcakes are bouncy to touch. Put a skewer into the centre of one of your cupcakes, if it comes back clean they should be done. Leave your cakes to cool completely on a wire rack.

When they are cold, your cupcakes are ready to decorate into mini bonfires!

For the icing, beat together your icing sugar, butter and cocoa powder using a freestanding electric whisk, a handheld electric whisk or a spoon. If using a whisk put onto medium speed and mix until it is well mixed and has come together.

Add the milk to your mixture a couple of tablespoons at a time. Once it has all mixed in, turn up your  mixer (if your using one) up to high speed add a few drops of orange food colouring (or more to get your desired colour); continue beating until your icing is light and fluffy (should take about 5 more minutes). If your icing is too runny to pipe, add more icing sugar until it's the right consistency.

Pipe your orange icing into a swirl on each cupcake to look like the fire; add 4 half Matchsticks chocolate onto the top joining together in the centre.
